Having introduced this season's first grouse to my  menu at The Kitchin I can't wait for all the fantastic produce that this season holds and all there is to look forward to in the next few months. The girolles and wild mushrooms are incredible this time of year and I am still enjoying the last of the summer berries from Perthshire. Hopefully I get to see you at The Kitchin in the next few weeks.

The book, Tom Kitchin, From Nature to Plate - Seasonal recipes from The Kitchin, was launched at the Edinburgh book festival on 17th August 2009 and is available in all book shops in the U.K. The book includes 100 recipes and an array of descriptive photographs by Scottish photographer Marc Millar, and will reflect a culinary exploration through the seasons by showcasing innovative cooking and modern reinventions of classic British dishes. Many references and stories offers a glimpse into Tom’s years of hard work, passion and dedication from working in some of Europe’s toughest kitchens, mixed with learning and inspiration from world-renowned chefs.
