The Restaurant opened in 2006 by husband and wife team Tom & Michaela Kitchin on Edinburgh’s stylish waterfront.

The sommelier has put together a few suggested seasonal wines to match some of the dishes on the A’la Carte menu; This is what he suggests in the early summer season:
Dampierre Grand Vintage 1er Cru 2002
A delicious blend of Pinot Noir (65%) and Chardonnay (35%), this champagne has matured for 6 years before disgorged. The result is a complex, elegant and refined champagne, or more likely ’a vin de Champange’, meaning that as well as being an excellent aperitif, it will cope very well with rich fish dishes.
