SOMMELIER'S GUIDE TO GOOD TASTE

The sommelier has put together a few suggested seasonal wines to match some of the dishes on the A’la Carte menu; This is what he suggests in the early summer season:

Dampierre Grand Vintage 1er Cru 2002
A delicious blend of Pinot Noir (65%) and Chardonnay
(35%), this champagne has matured for 6 years before disgorged. The result is a complex, elegant and refined champagne, or more likely ’a vin de Champange’, meaning that as well as being an excellent aperitif, it will cope very well with rich fish dishes.

Mud House Riesling, Waipara, New Zealand 2007
Zippy, fresh and dry, bursting with lime characters and a lovely mineral finish, ideal with the scallops and shellfihs starter or even Tom’s halibut main course.

Rioja Reserva, Bodegas Altanza, 2000
A fruit driven, modern style of Rioja from an up and coming winery in Rioja Alta. Full bodied, yet elegant with ripe black fruit flavours, round, juicy tannins and a lovely spicy structure coming from the 18 months of ageing in American and French oak.

Petit Manseng Doux, Domaine de Cabidos, Cuvee Comte Philippe, Bearn, South West of France 2005
Really surprising sweet white wine from the south of France. Not too sweet and sickly whilst retaining a lot of freshness. Packed with tropical fruit and quince flavours, hints of pineapple and long lasting spicy finish. Opulent but elegant. perfect with Tom’s crowdie and rhubarb cheesecake.
